(Which brings up a possibility I hadn't considered before. The eggs could be (a) SJ's weapon (b) scientific specimens or (c) food. Maybe the facehuggers or the eggshells are a delicacy for the spacejockeys -- like caviar.<g>)
Ridley Scott says they're weapons, and SJ's ship is a sort of military carrier for 'em. This is in his commentary on the Anniversary DVD. (But the idea of them also being a snack is fun and not without parallel - sailors have been known to filter and drink torpedo fuel.)
