One backup is enough, more is even better.

Well, sure it is. With one backup, your data will not be lost unless both the master data and the backup data is destroyed at the same exact time.
if fire burns down their house, or a thug breaks in and steals everything, both the main drive and the backup are gone.
offsite backups *must* be part of any backup strategy.
