You do tell them if you have pushed the speed rating of the film used. That is vital need-to-know information for the lab as it effects time in the tank and temperatures, depending on the particular process employed.

however, you don't tell them "it needs an extra minute of development time" or "10 seconds of exposure in the enlarger".

all you need to do is say "i pushed it a stop to iso 800" and they handle the details.
